About Being and Becoming


I had an early walk this morning and this beautiful flower caught my eye. The colors are fading and the leaves wither. However, in the process of decaying, something beautiful is appearing ... The beauty here is changing its form from the bright leaves to a pale, fragile structure.

A powerful metaphor! Wherever you are in your walk, you possess the unique qualities and beauty within you - the way it appears may change from time to time, but it will never disappear.

For you created my inmost being; 
you knit me together in my mother’s womb.
I praise you because 
I am fearfully and wonderfully made,  
your works are wonderful, 
 I know that full well.

The Roost Tribe


I found Bonnie Forkners blog Going Home to Roost in July. The creative DIY-ideas, beautiful photos and tasty vegetarian recipes kept me going back to her blog - which according to Bonnies own words is about:

 " everything handmade and anything homegrown.

I felt like having found a kindred spirit that likes the same things as I do, so I started to follow Going Home to Roost :)

... I found all of the above sounding great but I was wondering how costly an affair a Roost Tribe membership would actually be?
- I was gladly surprised when I found out that all the above costs only 5 USdollars a month!
So I signed up at once and was  eagerly looking forward to the Roost Tribe -release in September.

Now I almost can't wait until it's Friday, when I receice a weekly Roost Tribe newsletter!I especially look forward of receiving the patterns designed by Bonnie.

I enjoy crafting - making creative things is relaxing and you always get something nice out it. For me the creative input from the Roost Tribe is the thing that I love most. Getting the new patterns every now and then inspires me to do something with them ... like cards and small gift boxes :)

About the Feather


I watched the feather floating down,
And was reminded of what I once read,
That an angel was somewhere around me,
And this feather for me had been shed.

A glorious fall afternoon,
The sun ablaze in the sky,
But as I raked the fallen leaves,
Again I was wondering, why?




My thoughts were filled with confusion,
Though I tried to push them away,
So many feelings from the past,
Seemed determined, once more, to stay.

That's when I saw this feather,
And knew You were somewhere near,
For You had sent an angel,
To remove the lingering fear.




And as I took this white feather,
And held it gently in my hand,
I felt a warmth grow in my heart,
And began to again understand.

When I lifted my eyes to thank You,
An angel was soaring away,
And as she flew to Your open arms,
I knew peace would be here today.

Fall Break



The sun was shining brightly over the whole country today as the children and young people were exercising outdoors: The schools in Denmark spent the Friday before the Autumn Break doing all sorts of sports. The children carry packed lunches and drinks in small backpacks, and everybody is walking, jogging or running in small groups.

This day reminds me of the school skiing days from my childhood. The whole school was spending one day skiing each February. Everyone was wearing a small backpack with drink and snacks. During the day we could go to the school kitchen and get a bowl of peasoup and warm blackcurrant juice.
The memories from the skiing days from my childhood consists of the relative hign downhil loop in the end of the 5 km route, as well as a long upward slope in the middle of the 3 km route - The frosty pinetrees, the sun rays reflecting on the snowy fields, and heavy snowflakes falling on my clothes, making them a little heavy and wet. in the end of the day everyone got a skiing diplome ... I wonder if I could find my old diplomas from out cellar?

We'll be spending the autumn break at home - doing the things we feel like doing. No big plans - just taking it one day at a time. We've talked a bit of bowling etc. Im looking forward to have slow mornings ... and "just being".

I've been knitting a shawl from thick alpaca and merino wool yarn, I only need to do the fringes. My old shawl, that I knitted some years ago, is worn out and no longer puffy  - I'm wondering if i could find a way to reuse it?




Friday is a Cola day (Cola is my little vice from the time I was studying at the Bible Collage in Belgium).
Soon I'll be popping some popcorn in the kitchen. I'll dash a pinch of salt to the oil before putting the popcorn in. When the popcorn is ready, I'll season it with paprika powder ... that tastes  good and spicy!



 
I've been happy about these ceramic cups - they are my "good moments cups." Good moment cups in the sense that they're kind of symbolizing a hope for me - any moment will be a bit better when combined with a perspective of hope :-)  I found these ceramic cups form the Arts and Crafts Market in august.

Red Cabbage Salad with Feta and Almonds



I've been cooking many different dishes with cabbage during this autumn. Red cabbage tastes excellent as fresh, fried and cooked - in salads, soups and casseroles.

Red Cabbage Salad with Feta and Almonds is tasty, filling and easy to prepare. I found this recipe from Claus Meyers book Salatværksted. The original recipe uses dried cherries and cherry vinegar, which I have replaced with white wine vinegar and dried cranberries.


Red Cabbage Salad with Feta and Almonds (serves 4 persons)

Salad
600 - 700 g (21-24 oz) red cabbage
1 tsp. sea ​​salt / salt
80 g (3 oz) dried cranberries
1 large red onion

 
Dressing

0.5 dl (0,2 cups) cold-pressed sweet almond oil (or other oil that you use in salads)
3 tbsp. white wine vinegar
2 tablespoons honey

 
Topping
80 g (3 oz) almonds
splash olive oil
a pinch of sea salt / salt
80 g (3 oz) feta cheese


 Instructions:

1. Cut the red cabbage into fine slices, or chop it fine in a food processor.
2. Mix red cabbage and sea salt in a large bowl and allow to soak for 30 minutes.
3. Chop the red onion.
4. Mix the oil, vinegar and honey together.
5. Chop the almonds coarsely with a knife. Roast the lightly almonds in a frying pan lightly in a tablespoon of oil, season them with salt.
6. Mix the red cabbage, cranberries, red onion, dressing and half of the almonds. Set the salad in a serving bowl, sprinkle the feta cheese and the remaining almonds over the salad.

  

Red Cabbage Salad with Feta and Almonds keeps fresh in a refrigerator for a few days - It makes also a perfect lunch together with a slice of whole grain bread or a bread roll.

We've had quite a few showers of rain these days. 
As I went out after a heavy rain, I noticed that  
the leaves of this small tree are changing color
from green to deep burgundy and bright yellow.

Looking for Chestnuts







It's the season for chestnuts - they are hiding somewhere under the trees, 
covered by the fallen leaves.



Families get together and go looking for chestnuts.
A chestnuts feels smooth and nice in your hands,
bringing a cozy autumn atmosphere.





Ode to a Chestnut on the Ground

From bristly foliage
you fell
complete, polished wood, gleaming mahogany,
as perfect
as a violin newly
born of the treetops,
that falling
offers its sealed-in gifts,
the hidden sweetness
that grew in secret
amid birds and leaves,
