Plenty of Love

A funny slip of tongue makes me still smile, even if it is 17 years ago it took place.
My husband-to-be stood by my side in a big, beautiful and old Finnish chruch -
it was our wedding rehearsal, just a few days before our wedding.

We had planned a bilingual wedding, since me and my family comes from Finland,
where as my husband and his family comes from Denmark.
So the wedding ceremony was both in Finnish and in English languages.

As it came to pronouncing the wedding vows, my husband was supposed to say
"I love you in plenty and in need"
but he said instead
"I need you plenty in love"!

 As he said that, everybody (the priest, my mom, me and my good friend) started to laugh!
My dear husband-to-be smiled also, and he was curious to know, what was so funny ...
... when he heard about the slip of the tongue, he laughed out loud as well!

He twinked his eye to me, and said:
"But both ways count - I love you in plenty, as well as I need you plenty in love!"
... A sweet little twist of words, that actually goes both ways :)

A reflection

For now we see only a reflection as in a mirror; 
then we shall see face to face. 
Now I know in part; then I shall know fully, 
even as I am fully known.

Bowling on a Birthday

Our son wanted to invite also the girls from his class to celebrate his 12th birthday.
His wish was that the class could bowl together.
The girls wrote sweet birthday wishes to him on the chalk board of the bowling center.

The shoe size of pre-teens varies from 35 to 41 - everyone found a pair, that suited them :)

We made 3 teams, bowling on 3 lanes.

The supportive barriers alongside the lanes were up to keep the bowling ball on the lane,
so that everyone would be sure to hit at least a few bowling pins.

When someone made a strike, the screen would go wild showing a funny cartoon.

Before each turn there the screen was showing  some visual advice on
 how to aim the bowling ball in order to hit the bowling  pins.

Opening cards and gifts:"I wonder what I'll find here ... Thank you so much!!!"

The hamburgers & fries tasted good after bowling,

afterwards there was time for a little game or two,
before singing the birthday song & serving the  cake.

It was nice that almost the whole class were able to attend
- the day was filled with smiles and laughter! 

Our dinner table at home would have been crowded,
if we were to serve cake to these 18 young people
 - holding the birthday outside, bowling, was a succes :)

We talked to two parents, whose sons also have birthdays in January
 - we thought of holding their birthdays together next year - a triple birthday
... a great idea!

Smoke in the kitchen ...

I had planned to prepare baked potatoes to go with the chicken, but I decided to boil some spelt grains instead, since the spelt would cook faster. As the spelt was boiling, I thought I would Skype with my dear cousin - it is her birthday today. As I was logging off from Skype, I could smell the bitter smoke rising from the pot ... the water had boiled out and the spelt was burned - Oh boy!

Well, I was able to save the top layer of the spelt grain. The pot is also washed. And -  I learned not to cook and talk on Skype at the same time!

It is a good thing to be fully present in every situation, whatever you're doing - also when cooking :)

Well, we've eaten, the fume is gone and the kitchen is filled with fresh, cold air
... and it was lovely to talk with my cousin!

Ice and Sunshine

The cold weather has frozen the city lakes - the ice reflects the facades of the buildings in a lovely way. I'm attending a course in down town today and tomorrow. At the lunch break today I walked to the city lakes to get some fresh air, and to take a few snap shots with my cell phone.

A pretty rough wind was blowing, making the weathercocks spin around at the top of the towers.

The camera in the cell phone was a bit delayed when I took the pictures.  Some of the photos turned out a bit funny ... the horizon curved diagonally either to the left or to the right!

The camera took a shot as I was taking my gloves on, resulting in a self portrait of a kind.
I added two textures later on to spice it up a bit.

There were many lines on the ice - can you see the fine line consisting of footsteps,
right in the middle of the reflection of the building facade on the clear ice? 

The sun reflected the light on the buildings via windows,
creating spots of light on the walls.

I enjoyed biking today - tomorrow I'll wear a pair of overtrousers to stay warm!

Salted almonds

Homemade salted almonds have a pleasant, mild taste, and they are easy to prepare!

I tasted homemade salted almonds at my friend's house, and as soon as I heard that she had prepared them by her self,  I wanted to try making them as well... I'm fond of almonds - I like to eat a few of them in the afternoons, or with a cup of tea before serving dinner. I've bought a few times salted & smoked almonds from the store, but the ones I bought were too salty, and the smoke-flavour was a bit strong.

Now that I know how to prepare the salted almonds at home, the next thing I experiment with, will be seasoning them ... How would they taste, if I added some paprika or turmeric, or even lemon and coriander?

Almonds contain vitamin E, manganese and magnesium. The good fat in almonds contains healthy cholesterol, but also quite a bit of calories. A little handful, about 15 almonds, makes a good snack in the afternoonkeeping your hunger at bay.
Salted almonds
2.5 dl (1 cup) of boiling water
3 tablespoons fine salt
200 g (7 oz) of almonds
- Dissolve the salt in boiling water.
- Pour the water into a bowl, and add 200 g (7 oz) of almonds.
- Allow the almonds to soak in the water for about 30 minutes.
- Spread the almonds on a baking tray lined with baking sheet, and bake for 30 min.  at 150 ° C / 300 F. degrees.
- Let the almonds cool down before serving them.

Salted almonds taste good with fruit - I prepared a snack of pears, crackers with olive tapenade and salted almonds - yum! Mixing the salted almonds together with raisins and cranberries would give a nice sweet-salty mixture.
