Happy Valentine's!

We have winter holidays this week - slowly mornings & pancakes, with little trips and outings every now and then.

Yesterday we were skating. I still have the old skates from the high school times. They get dusted off about twice a year, one of them being here on winter holidays. Even if I don't dare to skate as fast as I used to do, I still enjoy the feeling of "swaying over the ice".

We took sandwiches and warm chocolate with us - it was cozy to sit down to rest your feet, and enjoy the hot chocolate! I took a few snap shots, which I'll be posting later on this week.


 
For the Valentine's dessert we're having - I know, we had this last week as well - chocolate mousse.


 
 
I grew up in Finland, where the focus of the Valentine's Day
is on cherishing your friends and friendship in general
- the day is actually called "the Day of Friendship".

Cooking is love made visible


The theme of Kim Klassens Texture Tuesday and Create with Joy's Friensdhip Friday is Love. Besides loving feelings, care and thoughts, love is also a matter of will and concrete actions. My focus has recently been in manifesting love in action in the kitchen - Love to my family as well as to myself :)

I've been doing menu plans for each week {which I've so far posted only to Mietteitä matkanvarrelta, my blog in Finnish}.

The aim with menu plans is, for the first, to focus on both eating various vegetables of the season and serve fish more often - and to be inspired to try new recipes.

Another goal is to plan the dinners in such a way, that we can use the most left overs from the day before.The left over rice can for example be used in a paella or risotto the day after.

And last but not the least, paying attention to the weekly special bargains, when making the menu plan, we can both reduce the times when we do the groceries, and limit the amount of the impulse purchases (that happens though still every now and then).
We've said no thanks to the food advertisement in a paper form, since we get the advertisements from the internet, which is more environmental friendly than the paper ones (in Denmark most of the supermarkets do publish the weekly bargains online.)



Well, now it's time to warm the scalloped potatoes (I made a double portion yesterday) and set a portion of butter beans to soak overnight ... Beans and lentils are delicious and easy-to-prepare, once you get to the rhytm of setting them to soak in the evenings. There's so many nice recipes with beans and lentil, that I look forward of preparing ... I'll promise to post the most tasty ones here on the blog!

Spinach Quiche with Goat Cheese and Almonds


This Christmas I fell in love with goat cheese - I've recently used goat cheese in a variety of dishes. I found the recipe for this delicious goat cheese quiche recipe from an inspiring book I received from my mom. This spinach quiche has a mild, round and delicious flavor - both my husband and our friends absolutely adore it!

I replaced some of the ingredients in the original recipe as follows: I replaced the hazelnuts with almonds, the nettles with spinach, the butter with margarine, half of the buckwheat flour with rice flour, and the creme fraiche with thick yogurt. The buckwheat flour has a bit strog flavor in my opinion, therefore I reduced the amount.

The quiche is gluten-free. If you wish, you can use all purpose flour, normal full cream and milk.


You will need the following ingredients:

4,2 cups (1 liter) fresh spinach
0,4 cups (100 ml) almonds
0,3 pounds (125 g) molten butter or margarine
0,6 cups (150 ml) buckwheat flour
0,6 cups (150 ml) of rice flour
2 tbsp thick yoghurt
3 eggs
0,8 cups (200 ml) of soy milk
0,4 cups (100 ml) soy cream
pinch of salt
0,4 pounds (200 g) crumbled goat cheese

Instructions:

- Rinse the spinach leaves and chop them a bit. If you use frozen spinach, let it drain a moment in a sieve.
- Stir the melted butter, buckwheat flour, rice flour and the thick yogurt ina bowl to a dough. Press the pastry into the bottom a pie dish, and prick small holes to the pastry using a fork. Bake for about 10 min. at 390 F / 200 C degrees. Then lower the temperature to 350 F/ 175 C degrees.
- Beat the eggs, soy cream and soy milk together, add a pinch of salt.
- Cover the pre-baked bottom with spinach, sprinkle thereafter the crumbled goat cheese on the top. Pour the milk-egg mix over the quiche. Add the almonds on the top, and bake it at 350 F/ 175 C degrees for about 30 minutes.

I decorated the baked quiche with a few fresh sage leaves. This quiche tastes delicious both warm and cold. You do not necessarily need to serve a salat to go with it  - The spinach, goat cheese and almonds give a rich and round flavor ... Bon appetit!
